Food facts, Zucchini (Summer Squash)

Zucchini Nutrition, Selection, Storage & Availability Zucchini is low in calories (73 cal/1lb), a good source of fiber, potassium, and vitamin C.  It is also a good source of the carotinoids, lutein and zeaxanthin.  Choose a zucchini that is small to medium sized and without soft or wrinkled skin.  Zucchini should always be picked before the rind hardens and when the skin is still shiny.  After picking, store the zucchini in a plastic bag in the refrigerator to keep it hydrated.  Zucchini will last up to one week in cool temperatures. Fresh zucchini is available in Wisconsin from July through August.

Zucchini Extras Zucchini is the most popular of the four summer squashes grown in Wisconsin.   Other types include yellow straightneck, yellow crookneck, and Patty pan squash.  The vegetable is typically found in the northern region of the U.S. The name Zucchini comes from the Italian “zucca” for pumpkin, squash or gourd.  It is a relatively new vegetable with its origin tracing back to approx. 1900.  The zucchini is considered a “summer squash” because of its place in the squash family.
