It is also a good source of the carotinoids, lutein and zeaxanthin. Choose a zucchini that is small to medium sized and without soft or wrinkled skin. Zucchini should always be picked before the rind hardens and when the skin is still shiny. After picking, store the zucchini in a plastic bag in the refrigerator to keep it hydrated.
